About Our Teas
Raw Puerh (Sheng) is naturally fermented over many years, developing complex flavors gradually. It starts strong and bitter, mellowing with age. Ripe Puerh (Shou) undergoes accelerated fermentation, producing a smooth, earthy, dark tea ready to drink immediately. Raw is better for long-term aging and investment, while ripe is perfect for daily drinking.
Puerh tea can be stored indefinitely when kept in proper conditions. Raw Puerh actually improves with age, becoming smoother and more complex over decades. Ripe Puerh is already fermented but continues to mellow over time. Store in a cool, dry place with good air circulation, away from strong odors and direct sunlight.
Yixing teapots are made from unique Zisha (purple clay) found only in Yixing, China. The clay is porous, absorbing tea oils over time and seasoning the pot. This enhances the flavor of tea with each use. Each pot should be dedicated to one type of tea. They are unglazed, allowing the tea to breathe during brewing.
Many of our teas come from ancient tea trees and gardens that follow traditional, natural farming methods without pesticides or chemical fertilizers. While not all have official organic certification, they are grown using sustainable practices. Ancient tree teas, in particular, come from trees 100+ years old that grow naturally without any chemical intervention.
Ancient tree tea (Gushu) comes from tea trees that are typically 100+ years old, with some being 300-800 years old. These trees have deep root systems that access minerals and nutrients from deep soil layers, producing more complex and flavorful tea. Ancient tree teas are highly prized and more expensive than plantation teas.

Storage & Brewing
Store Puerh in a cool, dry place with good air circulation. Keep it away from strong odors (spices, perfumes, cleaning products) as tea absorbs smells easily. Avoid direct sunlight and extreme temperature fluctuations. A dedicated tea cabinet or closet works well. You can keep tea in its original wrapper or use breathable storage containers.
For long-term storage, keep the wrapper on. It protects the tea while still allowing it to breathe and age properly. Remove the wrapper only when you are ready to break off pieces for brewing. The wrapper also contains important information about the tea vintage and production.
Use gongfu style brewing: rinse the tea first with hot water (discard this), then do multiple short infusions (10-30 seconds) with boiling water for raw Puerh or slightly cooler (95°C) for ripe Puerh. Use about 5-8 grams per 100-150ml of water. You can steep good Puerh 10-15 times or more, increasing steeping time gradually.
Raw Puerh: 95-100°C (boiling water)
Ripe Puerh: 95-100°C (boiling water)
White Tea: 85-90°C
Black Tea: 95-100°C
Aged teas can handle higher temperatures. Using a Yixing pot or gaiwan helps regulate temperature naturally.
Yes, tea can develop mold if stored in overly humid conditions. Good aging creates a pleasant fermented aroma. Mold appears as white, yellow, or green patches and smells musty and unpleasant. If you see visible mold, the tea should not be consumed. Properly stored tea develops a clean, earthy aged aroma.
